Nhech fish salad

Nhech fish salad (or cá nhệch) is popular in Ninh Binh but you have to try this specialty in Kim Son which is considered as best place to enjoy it. Nhech fish has curved shapes of eels but it is larger and longer. Nhech has much meat, less bone, lots of protein. First of all, Nhech fish is rubbed with salt, ash or bamboo leaves to wash off later bled.
