Strange yet absolutely delicious and nutrious, ant egg sticky rice is definitely an unforgettable dish of Ninh Binh. If Kim Sơn is well-known for eel spring roll and Hoa Lu is famous for goat meat then Nho Quan has made its own name for the ant egg sticky rice. Nho Quan is the limestone and mountainous area in Ninh Binh where has lots of brown ants with eggs. Sticky rice may be a very popular dish in Vietnam but there has never been any kind made of ant eggs apart from that of Nho Quan.. This is also a rare and special dish because ant eggs only hatch in a specific season (usually in February according to the Lunar Calendar). Moreover, finding a strange ingredient like ant eggs is difficult. That makes ant egg sticky rice so unique and is “hunted” by many visitors both foreign and local in Ninh Binh.
